Rhubarb and Apple Crumble
Ingredients
(filling)
- 2 Apples
- 5 Rhubarb
- 1 Orange, zest & juice
- 1 Lime, zest & juice
- Fresh Ginger- to taste
- 150g Soft Brown Sugar
- 2 tsp Mixed Spice
(topping)
- 75g Butter
- 75g Soft Brown Sugar
- 75g Wholemeal flour
- Cut up the Rhubarb and Apples, into bite size pieces
- Place the fruit into a saucepan and add the sugar and mixed spice
- Zest and juice the orange and lime and place both into the saucepan
- Chop and crush the ginger and also add this to the saucepan
- Heat the mixture, stirring regularly, until the sugar has melted and the fruit is soft
- Place the filling mixture into a oven proof dish
- Preheat the oven to 200C
- Mix up all the topping ingredients in a bowl rubbing between your fingertips until they become breadcrumbs
- Place the topping crumbs over the filling in the dish
- Place in the oven for approx 25 minutes.
- Serve with Ice cream or Custard
